Herb Salad & Green Goddess Rolls

We had the first harvest from our garden and made the greenest freshest meal I have ever had. There is nothing more satisfying than eating fresh organic greens that you grew from seeds. It looks like we are going to be eating like kings and queens this summer. It’s only the beginning :)

I made a delicious herb green salad and little green goddess rolls. The swiss chard, lettuce and all the herbs are from the garden. I grew the sprouts also in my new sprouting container! Sprouts are so nutritious and give a yummy crunch to salads and wraps. The germinating procedure takes only 3-5 days. Sprouts are packed tight with Vitamins A and C, Folic Acid, Fiber and Potassium. Most people wouldn’t think to begin sprouting and may not realize that it is so easy. I know that we are all busy people, really a busy nation. But sprouting will not take much time, and will give you much in return. I bought my sprouting container on Amazon for about $10.  I highly recommend getting into it!

GREEN HERB SALAD

I tossed together the following:

Mixed lettuce blend

Cilantro

Parsley

Dill

Basil

Sliced Almonds

Sprouts

Himalayan Salt

Ground Pepper

Balsamic Vinegar


GREEN GODDESS ROLLS:

Swiss Chard Leaves

Macadamia “Cheese” Spread

Avocado

Cucumber

Sprouts

To make these: spread some of the cheese on the bottom and dull side of the leaf. top with veggies and roll up. these turn out to be bite size pieces of heaven.

MACADAMIA “CHEESE” SPREAD:


2 cups macadamias

Little water

Fresh Dill

Put macadamias in food processor and fill a little with water. Add herbs. Blend until smooth.
