I had to make these once I saw them on Dee’s blog rawalicious.wordpress.com. These turned out SOOO good and everyone loved them! I had some friends over for a Sunday Funday and these were a hit. Eating raw food has so many healthy benefits for your body, you feel great eating it.
To make these little rolls of heaven I took the following
INGREDIENTS:
- nori rolls – I brought mine from whole foods in a 10 pack
- thinly slice the following veggies:
- 1 sweet red pepper
- carrots
- romaine lettuce leaves
- cucumber
- 1 avocado
- parsley
- hummus (or any other raw nut spread you would like. You can find the hummus recipe on my post: http://rebeccasremedy.wordpress.com/category/recipes/dressings-dips-sauces/ )
For the pine nut spread I used the following:
NUT SPREAD:
- 5 cloves of garlic
- olive oil
- fresh squeezed lemon
- fresh ground pepper
- tumeric
- 1 cup or so of pine nuts
- 2 tbsp. or so of flax seeds
DIRECTIONS:
in food processor put the ground nut mixture, chopped garlic, olive oil, lemon, ground black pepper, tumeric and a dash of water
I put it all together, I first spread the home-made spicy hummus (we are obsessed with this new hummus recipe! http://rebeccasremedy.wordpress.com/category/recipes/dressings-dips-sauces/) and the nut butter on one side of the nori wrap. Then I piled all the veggies in there and tightly rolled it up. I cut them in bite size pieces and served them with a little dish of low-sodium soy sauce and wasabi. Everyone loved them. I will absolutely incorporate these in to my weekly diet. Thanks for the inspiration Dee!

what is the recipe to the spicy hummus that you mention you spread on the nori rolls? and is the nut butter spread the recipe you do have on the recipe? Thanks,

Ditto to Desiree’s question…not sure what the Hummus recipe is…or is it what you called the “spread” with the garlic, pine nuts etc? Or is that the “nut butter”…please clarify. I live in Hawaii and love sushi rolls, and so this is a great vegan alternative! Thanks for posting!
